Onion & shallot (Praan) mixture
Ingredients:
1. Onions 1 kg
2. Shallots 1 kg
3. Mustard oil 1/2 kg
4. Clarified butter 100 gm
Suet can also be used in place of oil.
Method of preparation
1. Peel onions and shallots.
2. Chop them lengthwise.
2. Heat the oil in a pan/pot and then add butter and suet (if used). Deep fry the chopped onions and shallots on medium heat, turning these regularly. When they turn golden brown and become crisp, strain oil thoroughly through a sieve/strainer. This oil can be reused for cooking.
3. Grind these fried onions and shallots with the help of mortar (Nyem) and pestle (Tshoté). Add hot water gradually while you are grinding it and continue grinding till it turns into a thick fluid. It is now ready for use.
